Essentially a Chinese charcuterie, this terrine is made by slow braising pig ears with aromatics similar to a Chinese braise for 6 to 8 hours. Once tender, they are stacked, compressed and cooled, similar to a classic French terrine. This dish is best served chilled with any vinegar-based chili sauce along with your favorite white wine or sake.
